How to Roast Almonds in the Microwave

Roasting almonds in the microwave is quick and easy. It saves up to ten times the time required for oven roasting.

Here are some other benefits of roasting almonds in the microwave:

  • No unnecessary or unwanted additives

  • Removes cyanide flavour, astringency, and bitterness

Time

  • 2 minute hands-on time
  • 3 minutes cooking time
  • 10 cooling off time

Total time 15 minutes until you have ready-to-eat roasted almonds.

Tools

  • Microwave safe bowl
  • Tablespoon

Ingredients

  • 200 g raw (unroasted) almonds
  • 1 teaspoon of solé (1 part salt + 2 parts water)
  • 1 teaspoon of extra virgin olive oil

Step 1

Add, stir until all almonds are covered, and microwave for 2 minutes at medium power (600 watt) in a microwave safe bowl:

  • 200 g raw almonds
  • 1 teaspoon solé

Step 2

Get the bowl out of the microwave.

Add, and stir until all almonds are shiny:

  • 1 teaspoon of extra virgin olive oil

Microwave for 1 minute at high power (900 watt). When you hear almonds popping, immediately get them out.

Result

When the Almonds have cooled down for at least 10 minutes, evaluate:

  • Skin colour: slightly browner than before roasting
  • Sound: clear and crispy cracking sound when biting down
  • Texture: skin is coming off, solid and firm internals, crispy bite
  • Core colour: white-yellowish (when the inside is brown like roasted peanuts harmful acrylamide has formed)
  • Smell: fresh and no fishy odour
  • Taste: salty and nutty.
  • Thoughts, memories, emotions, childhood experiences. You name it

Storage

Let the nuts cool and breathe for 1 hour before storing them in an airtight container. The nuts keep well in a dry and cool place for 2 weeks.

So, there you have it! Perfectly salted crispy almonds.
